I turn the Genie off and do the following:

So how do you turn the genie off? and are you still in "speed" or "trip meter"

Sounds good and I've seen you doing it, but I just can't use that joystick through the aquapack, even on dry land let alone in the water.

No idea... I tried genie when it first came out, couldn't get it set up to my liking so turned it off after a couple of sessions.

I guess if you can't access the toggle on the water then my solution won't work at all for you, in which case the genie would be a better option.

I can understand your frustration with the Speed Genie on the GT-11, but I must say that for the GT-31, they really have it dialled in. Once you are on the water, there is no need to press a single button the whole time.

I wonder if an impassioned letter to Locosystech might get them to make one more release of firmware for the GT-11? Of course, they'd like to sell a whole lot more GT-11's, but maybe they'd come around to bolster the goodwill of the windsurfing community?
