I'd shim the stab slightly. Reason being that stab trim is very much related to speed and the bigger wing just isn't as fast. Also it's very possible the angle of incidence is different on the big wing.
I prefer mast track full back on surfy wings. I want maximum foot pressure.
I had a super good session today and it really feels like its coming together, I used a new 1240cm freeride front wing, really nice and cruisy but still has some pace. Long flights, feeling very comfy, the kit is so stable. My freind has also bought an Alpine Foil, A1 Carbon with the same wing and it was his first go today, previously on an NP . His comment.." This foil is so, so much better, really stable and balanced"

On the jibe thing - it's worth the journey. Someone with your skills won't take long and, once it's mastered, the ride seems to go on forever.
