Food
Entertainment

If you are having the food and entertainment rolled into one that might cause other issues for you

Now...

While I admire all the fancy pants hipster recipes you boys are sprouting, I do feel the need to set this all straight:

STEAK

Raging grill. Sear on one side. Two minutes. Flip repeat. Anything more than medium rare is for effeminate wankers. Rare is the go.

PRAWNS

Shelled. Three or four to a skewer. Hot grill. One minute. Flip repeat.

All other seafood gets wrapped in alfoil. Love my surprise packs at Chrissie when I forget which is the dhuie, pinkie, cray or coral trout.

CHICKEN

WTF? That's not barbie food.

LAMB

Bit longer than the beef. Render that fat.

Oh my sweet sweet lamb.

The only time you need a rub is from the missus.

Pork? What's that?

So endeth the redneck barbie lesson WA style.

And salad? That's women's business.

I'm doing a cheat/ experiment.

I have had a pork collar butt in a brine for 48 hours and now it has been in the sous vide for 46 hour and with another 24 to go. I have rubbed in a new trial spice rub ....

I will the sear the animal at about 500 c for some colour and bark...time will be a trial as well on the searing....

Just another way of cooking indirect on the weber. Check out the vortex would be my next step

Plus they are not wings ....damn aussies taking the best bit off a BBQ wing

This is what I made with a divider in the pit area so I could reduce the fuel but concentrate it for the shorter cooks. I have the narrow water resivoir built into it that holds 2-1/2lt that keeps some moisture in the cook as the water steams from sitting against the heat source.

That's awesome Vanders and the water idea is awesome for slow cooks. Did you use water with the wings? If so do you think you lost any crunch ? No build a few vortex

Chrispy, yeah used the water but I finished the nibblets over direct heat briefly to crisp them up.

Now your talking Ted, but I'd rather it evaporate from my skin than out of the Weber vent I think.

I could try straight apple juice in there though.....

Yep apple juice.... i have tried so many different liquids and I just think it us a wank.

Your rubs or marinades or brine will give you flavour (and wood if you are smoking) but I have found water to add as much flavour as everything else[:)

I prefer a whole wings with a dry rub cooked high and fast with a few sauces. Chrunchy on the outside and leaking juice .... bombs of happiness]
