The difference is between the foil sections used on the fin.

RAE102 is a great all round foil, the NACA-16012 is a high speed foil for longer lines e.g on bigger waves, and E168 is for smaller waves.

That's the short answer anyway, bottom line is that they all work well with some subtle differences.

I won't say 'collect all three' as I'm already ahead on the pimping stakes.

Size wise the same size as you are currently using is fine, just dial in the fin position an inch or so further back as the fin isn't raked so the centre of area is further forward on the Spitfire.

They are difficult to manufacture, you might find this interesting however... we did it before Rolls Royce did.
