I grew up close to Fremantle in WA ..... very European population with Italian , Croatian & Serbian people , you'd walk into smallgoods joints and my god
every different type of cured meats imaginable were available
Gathered & learnt a few things from there & another place
Absolutely nothing like Crusty Bread , Snag Meat , Chicks to make the Salady stuff , Cold Beer & heaps of it & mates to eat it all
after a decent surf

cool...butcher by trade my self ....left the trade 35 years ago ... but still dabble mostly with wild venison ducks etc that I harvest myself in NZ .. ... pork is usually a lot lighter in colour unless its wild ...good effort.
Bangalow Sweet Pork is the best pork I have ever had in Australia to date. Hoping to find me some nice tasty stuff in Hobart this weekend.
