Oh yes indeed. My advice would be to make sure you have a good clean out before eating these things - they can do some damage the next day

Could I suggest only quality Shiraz from De Bortlis Chataeu Cardboard be consumed in it's honour

Nah brother - two things ..... one it's a bit gamey & can be difficult to meld flavours right in balance .... two it takes yonks to purge wild pig of their parasites & you'd have to take down a Boar rather than a Sow (I'll fill you in one day about that when you get up here champion )

Hahahaha ....... mmmmmmmm fresh piggy sausage ...... nah this is a dry run of Mince to test out the recipe before I dry some for Beer & gourmet cheese consumption mate (farken superb with a cold beer & good mates at a sundowner I can tell you ) .... These Bangalow Piggies are very sweet so I need to balanace it right

Sort of Baz - did a bit work in that type of industry once

I grew up close to Fremantle in WA ..... very European population with Italian , Croatian & Serbian people , you'd walk into smallgoods joints and my god every different type of cured meats imaginable were available

Gathered & learnt a few things from there & another place

Absolutely nothing like Crusty Bread , Snag Meat , Chicks to make the Salady stuff , Cold Beer & heaps of it & mates to eat it all after a decent surf

cool...butcher by trade my self ....left the trade 35 years ago ... but still dabble mostly with wild venison ducks etc that I harvest myself in NZ .. ... pork is usually a lot lighter in colour unless its wild ...good effort.

Bangalow Sweet Pork is the best pork I have ever had in Australia to date. Hoping to find me some nice tasty stuff in Hobart this weekend.
