I am currently working through reviews of a significant amount of GPS watches. So far I have had the following to test:
Polar V800
Polar M400
Suunto Ambit3 Sport
Suunto Ambit3 Peak
Garmin 620 Forerunner

the other reviews will be out across the coming month while I am still waiting for the new Garmin 920XT, Fenix 3 and Vivoactive to arrive for testing also.
The more expensive models like the Suunto Ambit 3 and the Polar V800 do offer the ability to change to different recording intervals as Ali indicated which will give you much more accurate info. The cheaper versions do not and generally have a longer interval between tracks to help conserve power and space on their internal memory.
The big thing I have rated on the more expensive models is the vibrate function which is awesome when doing training sessions involving intervals. Nothing worse than having to constantly look at your watch. The Garmins also have a very loud alert tone and count down the intervals which is nice.
Garmin and Polar have great interval programming software inbuilt on their respective web pages while Suunto does not and has relied on 3rd party programmers to build these "apps" for Movescount.
