There is a new 8/5 on the horizon that has got my interest already.

Infinity B-Line Twin 8/5 x 31" @ 125 ltrs, designed as a twin with small trailer, wide point and fins well back, looks a nice go to board for a 85 - 90 kg SUP'r

Ooh. That 8.5 should be a lovely stable size for the more challenging conditions and my feather weight ~105 kg frame. I was thinking of the getting the current Blurr v2 8'5" x 30.5" x 121 L but this seems like a more interesting choice.

I have the 8'2 x 30.75, 121litres Starboard Carbon Spice which is super stable, easy to throw around and a good fast fun board.

Definitely worth considering as it's only slightly smaller.

I'm 5'11 and 95kg advanced rider.

I wanted a board I could ride in all conditions, catch heaps of waves and surf it like a shortboard.

Agreed. This is a great choice. I got a chance to try out the 8.2 Spice in choppy conditions back in 2023 and it was stable even when I weighed around 110 kgs.
