Re the Apple watch if you are running apps with cellular on they run flat in 2.5 hours , so for long down winders bad option if you want to call to get picked up.
Anyone tried the arm-band versions of these "waterproof" pouches?

The bags are only something like IP68 so they generally work if you keep them on the inside of your wettie because of the fact that the water pressure isn't very high as the water sloshes around inside the wetsuit. On your bicep the force when you crash is going to be very high so its going to leak. Might be fine for a waterproof phone but asking for trouble for anything else.
When I have been out on call I have some leeway in responding. Its enough to know that I have a call and then I can come back into the beach. Its just delaying things by 5 minutes. Not the end of the world - you could be driving when the call happens and still have to look for a place to park up. Same difference
