I'm an intermediate wing foiler, looking to get a new foil to advance my progression as I've been on the same foil for the last 4 years.
6', 165 lbs.
Currently riding a Naish HA 1040 foil with 220 stab and 75L board, which I can comfortably get going on in as low as 10 knots.
When foiling I'm mainly surfing or flat water blasting, sometimes go downwinding too. I'm also practising jumping (working on 360s at the moment).
I know I want something under 1000 because my 1040 is already great for light wind. Ideally I'd like to stick with Naish so I only need to buy a front wing but any thoughts or suggestions would be appreciated!
Current thoughts are either HA 840 or Mach 1 700 if anyone has experience with either one.
I went from the S26 ( yellow branding ) 1040 using the old 220 stab to using the current version of the Jet 1040 with the 2D 180 stab. Plenty of difference and improvement to the older version.
I'm now using the 840 with 2D 180 stab for 90% of my sessions with the 1040 coming out on those days of 9-11kn. Similar size and weight to you.
So yeah, staying on the Naish platform without coughing upon heaps of dough the change, going the 840 and 2D stab will help you advance.

I'm 67 kilo. I ride a 75 litre board. My light wind foil is the 840 HA , if wind is over 20 knots and the sea state very rough,I change to the 700 Mach 1 foil. Top speed is similar for both foil but the Mach 1 is a bit faster. It's also more forgiving at speed as I find the 840 gets too much lift at speed and can't turn as tight as the Mach 1.
Stay with Naish as it's more affordable. I do ride other brands as well so am able to compare them.
looking at your requirements, I think you will enjoy the 840 with the 2D 180 stab.
I've been on Naish for many years, my current favourite wing is the Mach 1 900. I've got the Jet HA1040 as my light wind wing but swap to the 900 as soon as I can. I'm 80kgs on a 65lts board.
The feel from the solid Mach 1 compared to the foam cored Jet HA is so much better, rock solid under foot. Tried the Jet HA 840 but it has the same issue as the 1040, just feels soft in comparison. My foil is also totally silent, no hums cause drag, just fast.

I have heard that and I like the idea of it because the stiffness will help with jumps but I worry the lower aspect ratio will make surfing smaller waves and downwinding a lot more difficult.
What's your experience with that?
The 1040 definitely has more glide than the 900 but the 900 is still my favourite due to feel. If there is enough wind, eg 15 knots I'm always on the 900.
Thank you to everyone for your advice, I ended up getting the ha 840 and am absolutely loving it. Still on the 220 stab for the moment but what a difference!
