I ride the One boards myself and absolutely love them.
Couple of things: (1) I have 2 boards, both in the Elite Carbon construction. It is more expensive, but the super light weight (5.8kg for a 6'1" 108ltr board) makes a big difference for how they feel when riding (basically, less swing weight and they feel like a much smaller board, but with the volume of a larger board). I imagine you experience this with the lighter weight Team Edition you ride? (Im not sure how they weigh)
(2) Even though I primarily wing foil, I actually bought the One Ocean Downwind Egg shaped boards rather than the Wind Ding specific board - The Downwind Eggs are longer for their volume and designed for downwind SUP foiling... however, they are designed for the ultimate in easy take offs, getting up on foil as easily as possible (because getting onto foil with a paddle going downwind is bloody hard!) - so this means they are the easiest board I have ever ridden to get up onto foil in light winds, yet super stable for kneeling and standing because of extra length for volume.
I am wondering, however, whether getting up from kneeling might have other factors involved than just pure volume. I am 85-86kg and my big board is the 6'1" One Downwind Egg at 108ltrs. This is a full floater and super stable for me. It is narrower, but I find it is the fore-aft pitch stability that makes the most difference in getting up easily from kneeling, not so much the volume, so a longer board really offers you this stability. The side to side role stability is mostly provided by your mast and foil set up anyway - board width does help but length makes way more difference for ease getting up from kneeling.
I wondering if you might find that going to larger volume might not be the ticket. At 76kg, you have a lot of volume already in your Fanatic at 105ltrs, but I'm thinking that the 5'6" length is likely what makes it harder to get up from kneeling...
Do you know anybody with One Ocean boards where you live that you could try for comparison? Personally, I would highly recommend the Egg Shape for wing foiling in light winds... still feels super lively. In addition to my 6'1", I bought a custom 5'8" Egg shape at 92ltrs, which is my "Small board" - I bought it immediately after a demo because it felt as small and nimble as the 5'0" 72ltr Sunova special edition wing board that I had at the time, but offered amazing early foil take-offs and the extra volume. It only weighs 5.4kg, so it really feels way smaller than it's length would suggest.
One more thing... the Egg Shape have a more forward box placement relative to the tail, so you also stand more forward (centred) on the board, which also makes for less swing weight and light feeling, while having all the benefits of extra volume and length.
Just a few of my thoughts...
Anyway... even if you go with the One Ocean wind wing board at 5'8" I am sure you will like it - they are an amazing brand with incredible construction. Give Jacko a call at One - he probably could help you make the decision about the right size and shape.... Good luck!
I am your weight 75kg and have the 5'4" One (111L). Stable without feeling big, carbon skin / very light. Most people can't believe the volume when looking at the board.
I reckon you might find the 125L a bit on the big side. See if you can try it out first though.

I agree with natho above regarding the 125l being unnecessarily large for your weight, even though I understand your reasoning. I'm 85kg and have the 5'4", 111 litres, but in the regular construction. It's got plenty of float for me and I can slog back if the wind drops. Obviously mine is heavier than the elite construction, but not by much. I highly recommend these boards, they're great.

I can understand the logic of the length to help standing up.
I also have a 7ft 6in x 28in x 135l Naish foil SUP specific board which has almost no rocker. It is excellent in light wind and I can stand up from kneeling easily with almost no help from the wind.
Also demoed the Naish 125l which is 6ft 3in x 31in wide and also reasonably easy to stand up.
A friend has the One 5ft 8in and I hope to try it soon.
