How to deflate the wing on the water and roll it up for a downwinder?

Does anyone have any good tips on how to best deflate the wing on the water and pack it for a downwinder? For example, put both sides of the wing on top of each other and then roll them up and pack them into a backpack? Open all valves (frontube and strut)? I'm always afraid that water will run into the valves... Thanks for your tips!

I have been doing them for a while now (Ensis wings) and never had any issues with water getting in them. Even if water did get in, thanks to gravity - you can drain the water out.I always use small wings (2.5 / 3.5) as they take less time to pack down and smaller to hold on your back.
