What drills are you all using to assemble/disassemble you foils. Preferably something with a torque setting that is reliable.

I use a Milwaukee electric screwdriver. Not an Impact driver, not a drill. I set the torque setting very low and just snug them . When you release the trigger the bit locks so you can turn the handle like a fixed wrench. I set final torque to very small grunt.

Impact all the way! Cheap ryobi since it lives in the car and is always sandy and salty

Ryobi handheld screwdriver.

whatever you get make sure it locks as seastudent says, and the magnet is strong so the bit doesn't fall out in the sand

Doesn't have a torque setting, but cranks to 5Nm and a slight quarter turn to nip it up has worked for me for the last 2 years

Do any of the brands have a recommended torque rating for the track bolts?
I've just been doing them by hand.

Yeah.... next thing you know they'll be using electric pumps to inflate their wings!

I use the manual foil fitting and wing pumping as part of my warm and psych up routine.

XU1 electric screwdriver from Bunnings. $20. then a nip up with hand held tool.

5 mins at the front end, 5 mins at the back end, 10 mins extra of waves = money well spent
