For winging which stabilizer works best with the Naish 1400HA front wing and 55cm fusilage?

Big for stable ride, small for quicker response.

Im currently running the HA280 with the 1400HA. Previously I was using the 310, but I haven't gone back to it since using the 280.

While a quick, simple answer is always appreciated, an explanation is sometimes useful.
Small stab allows quicker and easier changes of direction and lift of front wing, by being easier to weight and sink than bigger rear stabs.
As a windfoiler, I use a kite stab all the time, regardless of front wing size.
However, if you are looking for stability, a bigger rear stab provides exactly that. Choices...we are not one and the same, so while recommendations are appreciated, in the end, we chose what we use based not only on experience, but also by what we like.

Great response LeeD, a rationale for choice rather than a recommendation is more useful.
