Can anyone confirm for me what Locosys devices (GT-31, GT-11, GW-52) are responsible for track uploads with these firmware versions? (I'm updating the firmware version table I have)

They all look like versions of GT-11 and GT-31 firmware.
The ones that end in b and T are likely 'test' firmware. Commonly the special firmware written for us with Tom Chalko's help. i.e. the 'special GPS sailing software with the added features.
