Hi, I got theses in a bid for higher speeds but due to a back injury they barely got wet. I've been back gps speed sailing on slalom boards now for a couple of years but still find them a bit intimidating!
Any tips & advice, fin size/make, setting, trim etc would be super great?

Yes. It would be very helpful to know your sailing weight and where you sail.
But in general, assuming flattish water and speed runs:
Fins: 20-23cm speed fins are about right for the CA44. 23-30 for the CA53
Sail sizes: Cambered race ot speed sails. depending on your size - assuming 75-85Kg, 5.0m to 6.5m 'ishfor the CA44. 5.5m to 7m 'ish for the CA53.
There could be a bit of variation on that according to the location, water, wind conditions and your size and weight. 
I will add that both of these boards are quite user friendly in that they have plenty of length and volume for their width which makes them easier to start, sail and gybe than some speed boards, and still blisteringly fast, Chris L and Spotty have both done 50's on the CA44.

ive tried a Select Casper GPS 31 in the 53 (~85l) 7.0 & 5.8m, 44 (~75l) C3 venom 26cm, I don't know what's optimum?
Confutions mostly square, sometimes broader, usually some chop. Need to sail back up wind!

For you weight and those conditions at recon slightly larger fins than I listed in more vertical 'Pointer' type or slightly raked fins. Weed fins are usually a bit wider chord and a bit shorter as they are raked back from 40-45 degrees. 'Delta' type weed fins for really thick weed spots are a whole 'nother specialist topic.
That sail quiver should cover it well for you. :-)
From my experience: the smaller the speed board the less you will ever use it. If you sail in the chop even a user friendly speed board is unfriendly (unless you are Kato or Sailquick). Use those boards only in the right location for speed, which is flat water. Otherwise better a small slalom like 80 litres. For the best places you might have to buy weed or delta fins.
I am around 75 kgs and use this gear: JP69 - 53 wide with 6.2 down to 5.0 - MXR weed speed 22
Patrik 48 - 70 litres with 6.2 down to 4.4, 20 Muf weed speed

Is the 53 a speed board or Slalom ?
I currently run 52 and 53 slalom boards. The 52 runs a Venom C3 30, great for choppy water. Largest sail I would run is a 6.6.
The 53 I'll use a MXR 24 speed or a MXR 19 speed weed in flat water.
All my mast settings are in the middle and I do drive off the back foot. I do like sailing well powered up and dancing the board on the fin.
Get a good fin that you can load up with no spinout issues, this will vary between sailors so try different stuff. Get someone to sail your kit to get some feedback. Make sure that the foot straps are right for you, for me its no further apart than the distance of my finger tips to my elbow.
