I think the disconnection with the water would reduce the sense of speed. E.G. a monohull yatch feels much faster than a cat, although the cat is travelling at twice the speed.
I tried in the slight wind, not obvious at all. As more water is a big key was gliding sensation. pretty great. I am only debutant in foil and windsurfer. I miss the mast and boom to equilibrate

The rider there, Johhny Heineken, is more or less world No 1 racer. I think he disappeared for a month or so and swallowed a lot of seawater in secret, to reappear and pull tacks and jibes like that vid (of him training tacks/jibes). He was immediately +20-30% faster than the rest of the field & they are scrambling to catch up. Those foils are now the hottest thing in kite racing and have a 3k price tag and a long & growing wait time. (so I heard...)
