Take a look when they windsurf at Finland inner lakes until lakes covered by ice over winter time.
That's always the point of the year when all wind sports takes different form on icy lakes. Link below.

You get used to it and the winter is usually more windy than the summer, here in sweden. :)

It's more necessity than dedication. I used to sail in the middle of winter when I lived in Germany. Especially before foiling and kiting the best conditions usually occurred in the middle of winter. Just needs a decent wetsuit, gloves and boots. Plenty of times I drove home in my wetsuit because it was too cold to change at the spot. When I moved to Oz I would sail year around in a spring suit... not anymore.
