Just got back from Greece - sailing a yacht around Ionian Is, also windsurfed Naxos and Vasiliki. At Vass the wind comes in mid arvo was gusty but good, heaps of great hire gear & 100s out in 25+. Was cross off and gusty when I was out. I preferred Naxos as more cross shore and my kids could have a blast as well.

Massive equipment range, good instructors, great atmosphere. Cheap (if you don't get the package and just rent a place in town and pay for the hire separately). Gusty thermal wind kicks in in the afternoon, sometimes quite late, and sometimes it fails to appear. Very crowded - never seen more windsurfers at one place, but almost no kiters (AFAIK, they are not allowed). I think the bay has at least 4 clubs + some other sports clubs like scuba and sailing clubs. Choppy. I was a beginner when I went there a few years ago. I thought it windy, but others told me that it's not really that windy. In hindsight they were right - it's not that windy. I was surprised to meet other people from Australia there, and know quite a few here who have been there. But the main clientele is obviously British. I heard that it's like the cheapest windsurfing destination from the UK. The weather there is awesome - 30 degrees everyday, blue skies, not a drop of rain. The water is like brine. Food is cheap, but you'd better like souvlaki (I suspect all the restaurants in the harbour share the same kitchen) and Amstel beer.

The instructors are often pro sailors, training there when not competing.
On the no-wind days you can SUP, mountain-bike ride on some pretty big hills, learn to dive, or even travel to the other surrounding islands.
Not excessively choppy - they do a lot of freestyle tricks.
Sailing out in the deeper water allows for some good bump'n'jump.
pretty cheap - I would go back there in a heartbeat.
