I live in Rome (Italy) and will come to Sydney from Feb 8 for one month.
I am passionate about windsurfing and now windfoiling (not a fun of waves in the last years)
I plan to bring my equipment RRD 120 + foil and fin and couple sails (6.5 and 5.5??)
I would like to ask what you recommend in terms of equipment (are the sails right?) and wetsuit (how cold is the water in Feb?)

water is about 20 degrees celcius in feb in the ocean and warmer and inland spots.
I would bring one more bigger sail if you want to go on the fin e.g 7.5 or 7.3.
5.5 and 6.5 should be good for foiling.
we don't really get super strong winds here the afternoon seabreeze is around 20knts usually.

Often it is claimed that 'the afternoon sea breeze is 20 knots', but in reality standing on shore with a wind meter it is very seldom more than 16-18 knots of steady wind, and often a lot less. We sail in wind that is light, and much lighter than most people realise. Most of the data is measured in places nowhere close to actual sailing spots. Mid Sydney harbour or 2km off shore the readings are higher. Sydney airport station is one of the closest to a sailing location and I'm confident will back up my statement. Also remember hot air is less dense so not as "pushy". We use 6.5-8m sails here mostly. Growing up in Europe I only owned a 4.5 and a 5.2 by comparison.

Botany Bay if you are into flat water.
If you are into waves then Cronella or drive south a few hours to Gerroa for stronger winds.
Be prepared to use big sails and big boards unless you are super light, winds mostly 14-18knots and as its closer to the tropics the winds are less dense so you will use a bigger sail in the same winds than you would use in Europe.
You forgot that he also has a foil, with those 2 sails he can foil between 10-12 and 18 knts comfortably, then over 18 can use the 6.5 for the fin up to about 25 knts...seems good for most conditions.
Also Rome is not much north, winds are of similar intensity
NO Where.thats why l made the the big move back to W.A. A Black north Easter seebreezes is a rare event these days for Sydney . Kurnell is great, but a struggle to get parking on w/ns. Seal rocks is great spot if you like to travel.
pittwater afternoon seabreeze gets up to around 22 knots usually when it is properly in and narrabeen lake gets even stronger due to a compression/funnel effect.
sydney harbour at balmoral is really good in a southerly and north easterly (seabreeze) and pittwater can be decent south of scotland island and at palm beach
