Med is around 1250 sq cm low aspect.
I have used 7.4 Loft O2 on it.
But it foils up sooner with extreme pumping and lightweight 6.0.
Lighter sail pumps much better and allows board to unwet and use the foil lift.
If you can't pump well, bigger sail works.
Depends on the board ie can the nose carry it. I've seen one used with an 8.5 Techno OD sail. Surprisingly early flying. It was a very light day but it seemed to work. Probably not optimal to go that big but a 7.8 should be fine. The medium isn't that big compared to a lot of foil wings out there.

board width and especially tail width is important for larger sails

Yes, I agree with you to a point. I have a 130l 88cm wide foil board that's fine with an 8 and a 9 just sinks the nose and makes it a pain - I guess I'm reflecting more of my own experience. The fellow who was riding the 8.5 was using an 2005ish 74cm wide freeride board. He just mentioned to me that he's used a 9.0 as well.
surfasco, I have a friend who is about your size who regular uses a 7.3 2 cam freerace sail without a problem with a much bigger foil wing. And, the JP site lists up to an 8.6 on the board. Shorter answer, if you feel the board can carry the sail okay, imho, the foil should not be an issue. I hope that's the question you were asking
