Volume advice needed:

Pump most/all the way back most of the time, can do 2 for 1 once or twice per session, but advancing quickly (less than 10 sessions on prone).
Paddling skill is not great as I have a limited surfing background (more of a wing, kite, SUPfoil background).
Riding weak waves of the Mediterranian sea (2-3ft, 7-8 sec period) on a mushy, peeling from the top, not steep, reef break.
Riding a 51L, 5'6" 22" wide old, heavy prone board with a basic shape.
Would like to upgrade to a FFB Techno 2.0.
Which size would be the best for my **current **level allowing easy take-off but still pumps well?
3'11" x 19.75" x 2.9" @ 30 Liters
4'2" x 19.75" x 3.1" @ 34 Liters
4'5" x 19.75" x 3.2" @ 38 Liters
4'8" x 20.25" x 3.5" @ 43 Liters

Agreed. The 3'11" will probably need a white water push since it's so short to paddle, but will pump amazing once you finally get up. The 4'2" will be work catching waves, but pump good. The 4'5" should be just right and still pump really well. The 4'8" will be just a hair to long pumping.
Also think about your initial paddle out. Paddling tiny boards is like paddling a boogie board. Sort of sucks to do it for long stretches of flat water.
I do surf reefs but it's small most of the time so the push is not strong.
I do have a long paddle out to the reef so I'm afraid of going for the 4'5
The 4'5" is fine. I ride a 4'6" I came down from a 4'8". There's a couple spots with long paddles and I don't hate my life doing it. It's the 3'11" that I was referring to that will be miserable to paddle.
