So I understand the Bamboo version of The Big Stick is designed to have a lot more flex. I've used the regular Big Stick with the blue fabric (5'6"). I don't really push these things to their limits, no carving, just cruising. Would the Bamboo stick be of any benefit?

The blue one you tried was a classic, which is a Douglas Fir shaft covered with a fabric and fibreglass overlay. The regular Big Sticks has a plain Douglas Fir shaft. These types of Big Sticks have a little flex.

The bamboo has a lot more flex. Moso bamboo, is an amazing material and is very strong. The benefit of the bamboo is the energy return. The idea being you can push harder on the stick, and have energy returned with the flex and snap action, rather than just dissipated.

For cruising, I reckon the Classic is the best. Good performance, strong, and good Hawaiian styling looks
