Any sailmaker
Contender Sailcloth, Bainbridge Aquabatten and Dimension Polyant (all in Sydney) are suppliers and will have them on the shelf but yes, just about any sailmaker will have patterns to cut numbers out. If you're after letters other than AUS or non-standard sizing (12, 15 or 18") I'd try one of the first 3.
