The third example (the bottom one) is closest to being correct. The oo sound as in book not quite there as it needs to be drawn out a little longer, imagine if it were boook rather than book.

Always knew Bukh was like this, but I spent years pronouncing Sole like 'soul' before I was corrected!! ![]()

Most people can't be bother to write the e with the acute on top correctly (excuse is I can't find the character map or I was in a hurry)
I found several voiced samples on the www and came up with
book
boook
buck
and bew-k
so it seems all of the above are correct!
Maybe it's a dialect thing.
I always thought it was Book-Ahh!!
For some reason, don't remember why, that's how I've always been pronouncing it.
