Have a look at the posts by Chook he uses stock windsurfer rigs on a verticle stalk to great effect and has a lot of experience with them.
Thanks Hiko.
I think these links covers it fairly well.

I'm just in the process of building a new Lake Lefroy Mini yacht. Fitted with a laminated Queenland hoop pine laminated body (been a long process with other projects getting in the way).
I'm still using the mast "stalk system" as it works so well for keeping the "center of effort" in the correct position for sail sizes from 5.6m2 storm sail, up to 9.5m2 (I've got a 11.2 m2 For light wind too
) on my new Lake Lefroy mini still using 2 stalk base positions on the new chassis.
I weigh 106kgs.
My most used sail on my mini is easily my Neil Pryde RSRacing Evo 7.2m2.
Today on our local Pink Lake, it was 17 knots gusting to 24 knots so the 7.2m2 was the perfect choice.
I'm still looking for a 5500mm mast for my Class 5
