Plenty of spots up and down the coast of WA with plenty of wind around Jan/Feb (usually).

Suitable beginners spots :

Perth metro checkout www.waksa.org.au

North: Lancelin ok for beginners on the inside lots of wave options out the back, Cervantes - Thirsty Point, Geraldton again lots of wave options. My favorite is Denham in Shark Bay shallow flat turquoise water, a campsite on the beach and a backpackers in town but not much else to do if no wind once you’ve been to Monkey Mia or are not into fishing.

South : Australind

Have a good adventure!
