how do these two compare? ie. does the 16m turn heaps slower than the 13m etc
Am looking at grabbing at 16m for 11knt winds and depowering using adjustor cinch in kite for winds up to 25knts - I am a 75kg rider. Or would it be better to just grab the 13m and go for a 2 kite quiver?

I have got quite a bit of experience on venoms. I had a 8/13/19 Venom II quiver, but have never flown a 16 so can't comment on that. I am 75kg and around 6 foot. To be honest, the 13 only gets fun above the 20 knot mark. Anything under, you'll want something bigger in the venoms. I've spoken a bit to Nick from St. Kilda Kiteboarding, and he reckons don't go for the 19, but get the 16 as you only get a couple of extra knots on the bottom end, and the 16 is heaps faster and can take it up to much higher winds. I'm currently looking at getting into the synergies, and going to go for the 10/15 quiver. I reckon if I was going to get Venoms again, I would probably get a 10/16. A 13 on it's own can be frustrating.

I have to agree with James, Go a 10/16 quiver and you can use the same bar and lines on them both.
The 19 only has one or two knots bottom end over the 16, and for someone your weight it could quite posibly be less...
The only thing I disagree with is the 13 is a great kite and it's bottom end will suprise if flow correctly. You gotta use the kites speed, to get the most out of it. It was my most used kite last season...but that depends on your local conditions...
