Looked on the NSWKA locations, but I haven't seen any places for Southerly winds. Is anyone able to give me a tip? Maybe somewhere with flat water?

If you're only looking on the north side, flat water spots are rare. Southside, there is a big bay just south of the airport called Botany Bay. You have a choice of about 5 km of flat water, although I must admit it does chop up a bit.
Elsewhere around NSW are too numerous to mention.

I was wondering if we can come up with an extensive list of locations that should include all locations and something more useful than "very large sharks have been spotted here a gazillion years ago".
For example:
Place name, address (to punch in the gps), parking (paid or unpaid), wind direction (any possible wind direction), skill, local hazards, any kitesurfing shops close by (in case something goes wrong with your gear), shower facility, place to camp or something like that.
This could be very helpful for new people coming to Australia, or for beginners or anyone for that matter.
