Check out this awesome map of kitesurfing locations in NSW:

Try this map from the NSW sub-section.
Gives good details and lists hazards for different beaches.
Hope it helps.

Locations from Botany Bay to Old Bar that I have kited.....

Wanda - Only ever kited here in a NE breeze, a little bit gusty
Kernel - NW to NE, a good learners spot, very choppy, helpful locals
Sandringham - Only ever kited here in a SE breeze, very smooth
Dolls Point - Only ever kited here in a NE breeze, very choppy, helpful locals
Brighton CP3/CP1 - Only ever kited here in a NE to E breezes (SE should work)
Fishermans (Collaroy) - Only ever kited here in a NE breeze. Small launch area and a few rock reefs.
Narrabeen - Only ever kited here in a NE breeze (SE should work), Can get some nice waves but they are often close to the shore line
Umina Beach - SSW to SE (NE is possible in the channel for the thrill seekers). Waves are not generally large, but a 200m ride is an acceptable replacement, helpful locals
Toowoon Bay - Only ever kited here in a NE, (it is very small)
Picnic Point (The Entrance) - SW to NW, super smooth and super shallow (think two inches), generally gusty!!
Canton Beach (Toukley) - SW (SE should work), quite smooth close to shore, super choppy 200m out (you can surf the chop on big days!!!), very gusty!!
Norah Head - NE to E, an ocean side spot that is protected (mostly) by a rock reef. Can get a nice swell travelling gap
Birdie Beach to Norah Head - NE (E to SE should work), excellent downwinder location, great waves, odd shark, dolphin, turtle
Caves Beach - NE to SE, great wave location
Swansea Channel (Salts) - NE, best flat water spot I have tried, really consistent summer breeze when it blows
Swansea Co-Op - SSW to W, a good flat water spot, super shallow, wear booties for the razor fish, very gusty!!
Squids @ Belmont - NW to W, a good flat water spot, super shallow, wear booties for the razor fish, can be very gusty!!
Redhead to Blacksmiths - NE (E to SE should work), excellent downwinder location, great waves, odd humongous shark
Nobbies - NE, great surf location and also good behind the rock reef
Birubi - SW, one of the few good surf locations on the east coast, the wind is generally pretty consistent
The Lakes Way/Green Point, Forster - SW, nice shallow sandy location at the "Yacht Club" ...
Tuncurry - NE, only kited here once and it seems okay. Would be great for a downwinder from the top of the beach
Old Bar, - SE (E to NE should work), super smooth location but not very large with lots of MUD
