I am travelling to Egypt next month and want to know what the best travel insurance would be for that part of the world? And it must obviously cover water and adventure sports.

Most providers exclude risky sports such as kiteboarding so I've been through a fair amount of Terms and Conditions and found www.insure4less.com.au/ to tick the most boxes. Haven't had to claim anything so can't vouch on how good they actually are.
www.worldnomads.com.au/ looks pretty good too, with a specific "adventure sports" cover.

i used cover-more. they cover kitesurfing and many other adventure sports. price seems competitive too
Take lots of photos of your gear, anything worth $$$ take photos of, make's making a claim a lot easier if you need to that is, keep receipts of anything you buy overseas.
