Ok I've got a spotz2 foil mounted to a pretty ****box old 5.0 north rocketfish..
Got the foiling thing pretty dialled at all angles just struggling with the gybes a little and defiantly the tacks..
Anyone got any tips?? I've got it dialled on surfboard and raceboard just sorta struggling with the foil.. I think the board defiantly ain't helping my case tho
Anybody recommend a good board to step up to also??

So straight to foiling tacks and gybes ditch the board for a piece of 4x2
Ride the foil.
If you try and edge the board, it'll buck you off. Turn or edge the foil, it'll go round.
I wouldn't ditch the big board: you should be able to start a gybe (heel-to-toe) on the foil, then you'll need the big board when you run out of speed and touch down--at whatever point in the gybe. Took me a session to get it sorted and ride the gybe out toe-side for the rest of the tack...can't believe I've any talent at all.

Few more tips for Jibe and take. Put the fornt in the back insert and no back straps. This will help you to change feet on the board and progress to jibe.

My bad, I misread and got the opposite meaning.
By tack, do you mean coming about or just riding in a straight line?
tack as opposed to gybe. Meaning carving the board upwind and rotating you body and swinging the board around and being in the switch position to ride off. He is starting to nail them with the mast showing which is awesome.

He sure is. And it's fun to watch. Now I am trying to learn from him :)
I have noticed a significant pick up in people taking to foiling on the East Coast this season is it due to:
1) An ageing population with worn out knees?
2) It's a natural progression?
3) The wind has been crappy and light this season?

Yes. And...endless powder.
It's a natural progression. The only thing more rewarding than the feeling of cracking riding on the foil is when you start to consistently carve gybes.
Foiling is a bit easier on your knees, but not significantly so. The crashes are spectacular!
The light wind thing is a bit over emphasised. It is fun in light wind but I am having more fun in 20+ knots with a 7m kite. Riding is easier. The kite crashes less often and if it does it bounces off the water. Carving onto wind swell is huge. As well as being up on the foil, you have the ability to move around in three dimensions. Being up high is fun, heeling over is good. Pumping up and down on the foil is a bit like having your own personal 1 metre wave to ride on. Blasting downwind at speed and porpoising up and down onto the foil ... can be terrifying.

Pay close attention to your torso position vis-a-vis front wing. Keep the movement minimal. This one thing helped me to progress the most.
I can't tack yet. Foiling jibe I learned watching Gunnar Biniasch's videos on Vimeo. First the touch-down version and then the foiling one. The key was not to move my torso when switching feet and good kite movement timing.
The board. 2 front footstraps are obvious. Back strap gets in the way when learning, taking it off or moving it as far back as possible helps. A bit of width (50cm) keeps you more stable, length around 140 -150 cm is plenty. Large rail bevels (racing boards) can make the board feel a bit unstable, I'm not a big fan.
My gear:
alpinefoil xlp + 142 x 52.5 cm board. Very stable, I feel like I can dance on it without paying the price.
Spotz2 + Board Unlimited racing board, small (about 5ft x 22"). Very light, but feels quite unstable when on water, like a canoe, possibly due to large rail bevels (and narrower width). Spotz2 is more sensitive to keeping things aligned than most other foils.
