I'm looking for a spot in NSW that is ideal for a Noob to go on kite-boarding holiday. I want to get out of Sydney for a holiday and want to take my kitegear with me. I've done some lessons and can get up on the board but haven't learnt to control my speed with my back foot yet.

So where is a good spot with lots of waist deep water??

Old Bar (4 hours) or Jarvis Bay (3 hours - and not waist deep water)

Hoskoau,
Tuggerah Lakes - Central Coast, not to far from SYD. Depends on the wind direction either Entrance side (Picnic Point - about the only place close to SYD in winter for Westerlies See the NSWKBA site map - link below) or Chittaway Bay. If you don't mind a bit of mud and weed between the toes, is knee deep for miles and a lot of open space. Nubes use the areas generally and you won't be alone, and every one is friendly and willing to help.

Mate thanks for that, looks like I may be doing some day trips up there. Looks like a great place to get up to speed before setting loose on the local spots.

Cheers,
