I have a Zeeko Carver wing and 20kn is my best speed however 15 to 17kn would be the average.
Apparently 26kn this wing is capable of so how can I improve my top speed?

I have the same setup and the best I measured on a day (when I had a gps watch on) in wind that was gusting (from memory) to about 16/17 knots was 23.2 knots bearing off the wind on an 8.5m Cloud.

The foil was making me feel uneasy from about 22 knots on. Possibly be better with more experience at pushing it. This is not normally part of my riding routine.

Going to windward on the same day at up to 18knots was quite easy.

Take a bigger kite in higher winds. Pull the bar in and bear an arc broad reach and hold on. The process is the same on any wing... or an board for that matter.
