You probably want to stay and sail at Anse Vata beach, which is where most of the hotels are anyway.

November will be well windy. Trade winds are from the South East.
If you stay at Le Meridien the sexy concierge (thesexy one, you won't miss her) has a friend that rents out jet skis and boats for the day. You could drive out to a secluded islet and sail over the reef all day. We hired a 6m zodiac with a 115hp 4-stroke for about $400 for the day, including everything, and went to Amadee Lighthouse, which was cheaper than taking the big, stinky tour boat, and blow-your-hair-back-fast and so much better.

"Cool! You can take your family 20km offshore in this over-powered dinghy! The island you want is about... that way."
So much cooler than Australia in that respect, but I did find the lack of navigation markers, coral reefs, and the temptations of an over-powered dinghy a slight concern.
People also hire catamarans and sail around the outer reefs and meet sharks. : \
Everything is expen$sive there, but I did find a creperie that did great salmon-type crepes for about $AU10. And a bottle shop that had great wines for about $AU15. That deal I linked to above includes spending money for inside the hotel, enough for a week of lunches, breakfast is free and buffet and awesome. Pineapple jam!
P.S. The coffee is awful everywhere. Don't even.
