Cheese fondue party tonight

I'm dusting off mum and dads old fondue set to celebrate the news that latest research cannot link saturated fat with an increased risk of heart disease . We will make the cheesy sauce out of a number of well loved and formerly denigrated cheeses ,we will use chorizo to dip into the hot cheesy yummy goo and follow up with a chocolate fondue .this is new research finding is good news for fish and krill as there are serious doubts as to the benefit of supplementing with these oils for cardiovascular health.

You need to use 1/2 gruyere and 1/2 emmental (Jarlsberg will do) add o.5 liter of dry white vine for every 500 gram of cheese, set apart a small glass of fruit schnapps (vodka will do) at least 35 % proof and disolve a tea spoon of patato or corn flour.
Rubb garlic all over your fondue dish add vin and cheese and slowly start to heat, ad as much garlic and pepper as you wish.
When it is all melted add the schnapps and flour and mix well.
Just before serving put a small amount of bicarb soda(the point of a knif will do) thay will aerate it and make it creamy!
Please do not dip chorizo it is regarded as a crime in fondue country! nice crusty bread (pane di casa or pasta durum).
Refrain to drink beer or boost the alcohool content of the beer with cognac or rhum as cold low alcohool drinks won't mix well with cheese in your stomach and could make you VERY VERY sick (I know by experience ) Dry white vine is the way to go or warm tea for kids.

DO NOT USE CHEDDAR it will make it horrible as the fat from the cheddar will float at the top
